Butchery Master Class

These experiences will give you a fantastic opportunity to see an insight, on what is involved in the butchery trade. They can be taken individually or with a friend/family member. I will be able to show you the basic techniques of butchery skills. All of the Master classes are held in my work place. The Butchers At Cheddar Via Budgens. And here is where you can have the feel of a real working traditional butcher shop experience.

Also you will be able to see that we believe in sourcing the finest quality, locally produced and reared meat. All our meat is traceable,our lambs are sourced within a few miles of Cheddar. We have our own herd of Devon Ruby Red cattle, a native Devon breed in our other outlet Darts Farm,Topsham. Our animals are slow grown to their natural maturity, making for the best taste and texture. We also source our beef from Cullompton, Devon. All of our beef is hung in whole carcass form and dry-aged the traditional way. Our pigs are from Clyst St George, Devon, RSPCA freedom foods approved, also we buy pigs from other farmers that share the same values. Our free range poultry is sourced from Merryfield farm, Crediton, Devon. Who again share our passion and commitment to rearing birds to the highest standards of quality and animal welfare.

As always, my team in The Butchers At Cheddar are happy to help and advise you on every aspect of your meat order, from cooking tips and times to portion sizes and different meat cuts.

On joining Lee Spencer's Master class you will be provided with a white butchers coat, apron, and a white hat to wear during the class and basic butchers tools, saw, chopper, chainmail glove, boning and steak knives. I do strongly recommend wearing comfortable fully enclosed shoes or boots for safety.

Pork Butchery Master Class:


£95 per person

  • 2 ½ to 3 hours class 
  • One on one basis 
  • Find out the theory behind becoming a Master Butcher 
  • Understanding how to identify top quality meat 
  • Understand the different muscles and seems 
  • Break down a side of pork into primals 
  • Learn cutting techniques 
  • Knife sharpening skills 
  • Tying skills 
  • Take home £25.00 of pork cuts that you have helped to prepared

Lamb Butchery Master Class:


£135.00 per person

  • 2 ½ to 3 hours class 
  • One on one basis 
  • Find out the theory behind becoming a Master Butcher 
  • Understanding how to identify top quality meat 
  • Understand the different muscles and seems 
  • Break down a half of lamb 
  • Learn cutting techniques 
  • Knife sharpening skills 
  • Tying skills 
  • You will get to take home your half lamb cut by your very self

  • I reserve the right to refuse participation in the class of anyone not wearing the protective clothing
  • I reserve the right to cancel any class at any time. In the unfortunate event of this being necessary, I will do my best to contact you at the earliest opportunity to let you know and you will be offered the choice of an alternative date or a full refund
  • I reserve the right to refuse participation in the Butchery Class of anyone who I believe to be under the influence of drugs or alcohol
